Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.
Place in serving bowl, and create a shallow well in the center of the hummus.
Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).
Hello Mumblers! We are very proud to announce that we are now officially New Orleans residents. We made the move July 1 and embarked on our summer tour about week later. Check the shows section of our site, as we are in the midst of a 23 date run, which will take us from VT back home, with stops in many of our favorite locations. Come September, we will be in the Crescent City working on a full length album with local musicians, slated for release on Halogen Records in early 2011.
